Easy Vegan Dinner/Breakfast Sandwich

Enjoy this Easy Vegan Dinner/Breakfast Sandwich whenever you want. Mostly, I eat whole foods instead of processed foods. Every once in a while I eat comfort food, as long as it’s vegan. This might remind you of McDonald’s breakfast sammies, but tastier, and vegan.

What’s a Dinner/Breakfast Sandwich?

A Dinner/Breakfast Sandwich is a breakfast item eaten at dinnertime. I don’t often eat breakfast, but I love breakfast foods. Namely vegan pancakes, High-Altitude Vegan Blueberry Muffins, and vegan french toast.

Unfortunately, some store bought english muffins are not vegan because they contain whey. These 365 Whole Foods Brand English Muffins as well as these Dave’s Killer English Muffins are vegan.

Gluten-Free Vegan English Muffins

If you need Gluten-free & vegan english muffins, these Rudi’s Organic Muffins are a good option.

Vegan Breakfast Sausage

My favorite are these Spicy Beyond Meat Breakfast Sausage Patties. They aren’t all that spicy to us, but spice is a personal thing. These tasty patties are vegan, gluten-free & soy-free.

Vegan sausages for Easy Vegan Dinner/Breakfast Sandwich

If the word spicy concerns you, you could go with these Classic Beyond Meat Breakfast Sausage Patties, which are also vegan, gluten-free & soy-free.

I’ve also sprinkled poultry seasoning or just ground sage on Lightlife’s Gimme Lean Sausage when making Easy Vegan Dinner/Breakfast Sandwiches. It’s pretty easy to shape into patties and it benefits from the poultry seasoning or sage to make it taste more breakfast-y. Please note that Lightlife’s Gimme Lean Sausage is vegan, but contains soy and wheat.

Vegan Egg Products

The easiest & my favorite vegan egg product to use is these frozen pre-made Just Egg Folded Plant Egg Patties. They just need to be heated, so they are easy to use if you want to make everything for the sandwich under the broiler of your oven, or in a toaster own. I usually microwave them before I place them under the broiler to make sure they get warm in the middle. They can also be made using the toaster.

Just Egg Folded Plant Egg Patties are vegan, gluten-free & soy-free friendly because they are produced on shared equipment. Here is the Official Just Egg Allergy Chart.

Just Egg Folded Plant Egg Patties contain 7 grams of protein per serving. A chicken egg contains about 6 grams of protein per serving.

Vegan egg patties for Easy Vegan Dinner/Breakfast Sandwich

Other Options

This version of Just Egg is liquid and prepared as you would using a product like egg beaters. For this sandwich, just make the egg patty in a pan or in the microwave. Unlike the Just Egg Folded Plant Egg Patties, this product contains soy.

Follow Your Heart Vegan Egg is a powdered egg replacer. It’s vegan & gluten-free, but contains soy. To make add plant milk or water and prepare in a pan according to package instructions.

Avocado or Vegan Cheese

I love adding sliced, ripe on the top layer of these Easy Vegan Dinner/Breakfast Sandwiches. If you’d prefer you can melt a vegan cheese slice on top of the egg patty in place of the avocado.

Optional Vegan Butter

I butter the toasted english muffin halves with Earth Balance Vegan Spread or Miyoko’s Cultured Vegan Butter.

Let’s Make an Easy Vegan Dinner/Breakfast Sandwich

Turn the broiler on. Microwave the just egg patty for 30 seconds. Then line a broiler-safe pan (like cast iron) with foil. Place the just egg patty and frozen sausage patty/patties onto the foil. Place under the broiler, on the second shelf below the broiler for 3 minutes. Flip just egg patty & sausage patty/patties and broil for about 3 more minutes. Watch to avoid overcooking.

Toast or broil english muffin until golden.

Spread Earth Balance onto the english muffin, if desired.

Assemble sandwich. Sausage on the bottom, then just egg patty, and then avocado. Enjoy while fresh!

This recipe shows my quick & easy way. They are lots of ways to make this sammie happen. If you have a toaster you might use it for the english muffin, you might want to cook the beyond meat sausage in a pan on the stove, or just heat the just egg patty on the microwave.
