This is my Favorite Green Power Juice. It may take time with green juice before your taste buds adapt and you crave it.
Be careful, you might become a freak—the kind of vampiric freak who thirsts for the rich, green nectar of things that grow in people’s gardens. Yep, your mouth might begin to water when you smell lawn clippings. Let it get weird.

This juice has cucumber & parsley which really helps mellow out the celery & kale. Drinking this stuff makes me feel energized, revitalized and refreshed. Like a really healthy vampire—is that an oxymoron?
You may want to add some lemon or apple to this, at first, if you are new to juicing. I’m hardcore, I no longer put sugary fruits in my juice. I have though—we all start somewhere.
Drinking freshly-made, live juice heals our bodies. The movie Fat, Sick & Nearly Dead got me started with juicing, almost a decade ago.
Juicers
I have an older version of this style Centrifugal Juicer. I’ve had it about 9 years. It’s made lots of juice. When The Official Plant Test Kitchen Taster moved in, we ended up with two Centrifugal Juicers. We gave one away. I used to think we gave the wrong one away because the one we gave away had a pitcher that held back foam when it poured. Then I got used to the juice having foam, it looked like a fancy green latte. Of course, if I really wanted to, I could use the straight-side of a butter knife to hold back the foam.
We still also have another pricier, fancy juicer with lots of parts. I haven’t gotten over my resistance to figuring out how to use it. It seems hard. The Centrifugal Juicer is easy.
Supposedly our fancy juicer extracts more juice and loves us unconditionally, or something.
Watch The Pitcher
Especially if you’re trying to steal home base—I’ll be here all week. The juicer’s pitcher will start filling up really fast when you juice the cucumbers. When I’ve focused too much attention on the feeder part of my juicer, my gorgeous green juice spilled onto the counter and dripped onto the floor.

Extra Juice
This recipe can easily make more than 32 oz depending on the size or juiciness of your veggies. I didn’t even use the 3rd cucumber I had out all ready to juice because I had so much juice already.
Extra Credit
I find that pushing the pulp through the Centrifugal Juicer after juicing, extracts more juice.
To get the most from your veggies, you can put the pulp in a bowl and set the juicer back up. Then pack the pulp into the tube and use the feeder to juice that pulp. You get bonus juice! Also, I probably consider you a better human being for doing this.
Doing yourself this kindness of rinsing the pulp from the juicer and getting the juicer parts in the dishwasher is a gift you should give yourself. This little routine I have of making the juice, placing the juice in the fridge and cleaning up before I drink it, has made me love juicing. Trust me—soaking the juicer parts doesn’t cut it. Juice, clean up, drink…
Be sure to use the brush that your juicer came with to scrub the fine-screened part of the juicer before loading it into the dishwasher.
Compost if you can

Composting the pulp from the juice is a fantastic thing to do. If you need to wait & take the pulp some place else to compost it, store it in your freezer so that it doesn’t stink up your house. Also, if you put the pulp in the trash, without taking the trash out, it will get funky—dirty diaper funky.

Try to drink the juice shortly after juicing
This juice is alive with beautiful enzymes. To get max benefits from your juice, drink it shortly after juicing. If you don’t plan on drinking all of your juice at once, separate it. You do not want your saliva in the juice because it will breakdown the enzymes and good things in the juice. If you need to make the juice ahead of time you can store it in the fridge for up to 24 hours, if using a centrifugal juicer.
Sometimes I make 32 oz of juice and drink 16 oz in the morning and 16 oz later on in the day. I do this on workout days or when I am sore from workout days.
If It’s too intense
You will know the juice is too intense if you
- drink it and gag
- run to the toilet/everything must go
- have serious trouble finishing it
However, juice that is too intense for you now may not always be too intense for you. Your taste buds will adapt and you might find yourself wanting to amp up the kale—be appropriately amazed when this occurs.
To make it less intense
- juice with a green apple
- use a little lemon or lime juice to cut the bitterness
- serve over ice to dull the intensity with coldness
- use more cucumber
- use less kale
- water it down
- drink it with a reusable glass straw or a reusable stainless steel straw
