Marinated Oven-Roasted Brussels Sprouts are lemony & hearty. Made with only a few ingredients, these are fabulous to make-ahead because they marinate overnight.

Marinades are fun & easy

I love marinating things. I especially love overnight marinades. Put some stuff in a big Ziplock bag, toss it, and cook it the next day.

Wanna make these vegan-parm-tastic?

I strongly recommend adding 5-Minute Garlic Hemp Seed Parm a.k.a. Garlic Shake after you pull the Brussels sprouts out of the oven. I put this on many roasted veggies because it’s amazing.

Oil

I recommend a high smoke point oil like avocado or non-virgin olive oil for this recipe.

Let’s Make Marinated Oven-Roasted Brussels Sprouts

Combine all ingredients in a gallon size Ziplock bag or airtight container. Close bag or container. Toss to coat and distribute the marinade throughout the Brussels sprouts. Refrigerate overnight.

When ready to roast, preheat oven to 400 degrees F.

Place Brussels on a baking sheet and bake for 15-20 minutes.

  • 2 lb Brussels cut in half or quartered
  • 1/2 cup lemon juice ~juice of 2 lemons
  • 3 TBSP avocado oil or other neutral, high smoke point oil like non-virgin olive oil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions
